Sauces in Italy dress the pasta. They should never rest in the middle of a plate of pasta, they should never sit on top of a platter of pasta. Rather, sauce and pasta in true Italian cuisine, are one. The sauce should adhere to the pasta so that every bite of pasta has the sauce perfectly blended. The cut, shape, and texture of the pasta is selected according to which sauce will adorn the pasta and vice versa. Pasta sauces in Italy are as varied and numerous as the cuts of pasta; red, rose, creamy, vegetable based, spicy, herb based, or as simple as an Extra Virgin Olive Oil with garlic.
